Ingredients:
- 1/2 cups - vegetable oil
- 3 cups - onion chopped
- 1 cups - red or yellow bell pepper chopped
- 1 whole - poblano pepper chopped
- 3 teaspoons - salt
- 1 1/4 teaspoons - cayenne pepper
- 1 pounds - jalapeno beef smoked sausage sliced or diced
- 1 1/2 pounds - chicken boneless, skinless, cubed
- 3 whole - bay leaves
- 3 cups - brown rice uncooked
- 5 cups - chicken broth
- 1 cups - white wine
- 1 cups - green onions chopped
Directions:
Heat oil in a large cast-iron Dutch oven over medium heat. Add onions, bell peppers, poblano pepper, 2 teaspoons of the salt, and 1 teaspoon of cayenne. Stirring often, brown vegetables for about 20 minutes or until they are caramelized and dark brown in color. Scrape the bottom and sides of the pot to loosen any browned particles.
Add the sausage and chicken and cook, stirring often for 10-15 minutes, scraping bottom and sides of pot to loosen any browned particles.
Add remaining ingredients and stir well. Cover Dutch oven with lid and place in 350° oven. Bake for 1-2 hours.
