Chicken Jambalaya

Ingredients:

  1. 1/3 cups - Celery
  2. 1/4 cups - Onion
  3. 1/4 cups - Green Pepper
  4. 2 tablespoons - Margarine or butter
  5. 14 1/2 ounces-weight - Can Tomatoes
  6. 1 1/2 cups - Chicken Broth
  7. 2/3 cups - Long Grain Rice
  8. 1 teaspoons - Dried Basil or Thyme
  9. 1/2 teaspoons - Garlic Salt
  10. 1/4 teaspoons - Pepper
  11. 1/4 teaspoons - Bottled Hot Pepper Sauce
  12. 1 whole - Bay Leaf
  13. 2 cups - Cooked Chicken or Turkey

Directions:

In a large skillet, cook celery, onion, and green pepper in margarine or butter until vegetables are tender. Stir in the undrained tomatoes, chicken broth, rice, basil or thyme, garlic salt, pepper, hot pepper sauce, and bay leaf. Bring to a boil; reduce heat. Cover and simmer about 20 minutes or until rice is tender. Stir in chicken; cook until heated through. Discard bay leaf.
