This is a wonderfully simple but spectacular dish in which chicken that has been baked with tandoori masala, is transformed with a tomato, cream and butter sauce to a delectable mouth watering dish.

Ingredients:
- - 2.5 Ibs. of skinned chicken thighs or breasts
- - 3 tablespoons of Tandoori Masala This can be store bought
- - 1 tablespoons of oil olive oil or vegetable oil
- - 3 tablespoons of natural plain yoghurt
- - 1/2 teaspoon salt The tandoori masala already has salt added in it
- - 4 tablespoons tomato puree
- - Water to mix
- - 1 teaspoon ginger powder
- - 300 ml. single cream
- - 1/2 to 1 teaspoon cayenne powder
- - 1 teaspoon cumin powder
- - 4 oz. unsalted butter or butter substitute
- - the prepared Tandoori chicken
- - 1/2 teaspoon salt
- - 2 tablespoons of washed and chopped cilantro leaves
Directions:
Preparing the marinade and baking the chicken
1. Cut the chicken thighs/breasts into 2 inch pieces and keep it in a bowl.
2. Add the Tandoori Masala, oil, plain yoghurt and salt to the chicken pieces.
3. Mix well and keep it in the refrigerater to marinate preferably overnight or for a minimum of 6 hours.
4. Heat oven to 425 F.
5. Take the chicken pieces out of the marinade and arrange them in a large shallow baking tray in a single layer.
6. Bake for 25 minutes.
7. Take the tray out of the oven and leave it to rest while preparing the sauce.
Preparing the sauce.
1.Put the tomato puree in a clear measuring jar.
2. Add water to it to make upto 8 fl.oz. of tomato sauce.
3. Add the ginger powder, cream, cayenne powder, cumin powder and salt. Mix well.
4. Heat the butter or the butter substitute in a wide saute pan.
5. When the butter has melted, add all the ingredients from the measuring jar.
6. Bring to simmer and cook on medium heat till the sauce thickens but is still in a flowing consistency. This should take about 5 to 10 minutes.
7. Add the baked chicken pieces to it.
8. Cover and cook on low heat, till the chicken pieces are coated well with the sauce. This should be about 5 to 10 minutes.
9. Garnish with cilantro leaves.
