Chicken Francaise

Ingredients:

  1. 2 - large eggs
  2. 1/4 cups - flour
  3. 2 tablespoons - oil
  4. 4 - boneless, skinless chicken breasts
  5. 1/2 teaspoons - salt
  6. 1/2 cups - chicken broth
  7. 1/2 cups - white wine
  8. 1/4 cups - lemon juice
  9. 1/4 cups - butter
  10. 1 tablespoons - parsley

Directions:

Heat oven to 400 degrees. Beat eggs. Spread flour in a shallow pan. Heat oil. Sprinkle chicken with salt. Dip chicken in flour and then in egg. Cook chicken 3 mins. each until golden. Put aside. In a saucepan, add chicken broth, wine, and lemon juice and bring to a boil. Boil 6 mins. until mixture is reduced. Remove from heat and whisk butter into sauce until slightly thickened. Stir in parsley and pepper. Pour over chicken and bake until heated through and chicken is all the way cooked.
