Ingredients:
- 4 - chicken breasts boneless, skinless
- 1/3 cups - olive oil
- 2 teaspoons - fajita seasoning
- 2 teaspoons - chipotle pepper seasoning
- 1 whole - green pepper sliced
- 1 whole - sweet yellow onion sliced
- - butter
- - flour tortillas
Directions:
Marinade chicken breasts (or use chicken tenderloins, if preferred) in mixture of olive oil and seasonings for 15-30 minutes. Heat grill to medium-high heat and cook chicken breasts 'til nearly cooked through. Meanwhile, in skillet, melt butter over medium-high heat and cook green peppers and yellow onion slices until lightly browned and tender. Remove from heat. When chicken is finished on grill, remove from grill, slice into strips, and add strips of chicken to skillet with peppers and onions. Return to medium heat and allow to simmer for a couple of minutes 'til chicken is completely cooked through and flavors have blended. Serve on warm flour tortillas with optional grated cheese, sour cream, guacamole, and salsa.
