Ingredients:
- 1 1/2 pounds - skinless, boneless chicken breast cut into strips
- 2 - sweet peppers cut into strips
- 1 - poblano pepper cut into strips
- 1 - medium onion cut into thin wedges
- 2 teaspoons - fajita or Southwest seasoning
Directions:
Toss all ingredients together and divide evenly among four sheets (about 18-x-30-inches each, folded in half and coated with cooking spray) of heavy duty aluminum foil.
Enclose ingredients in foil (wrapping up long sides and sealing with a double fold, then folding up remaining edges to completely enclose, leaving room for steam to build).
For campfire cooking: Place packets on top of campfire embers (not a full flame) or place on a grate over the embers, and cook for 10 to 15 minutes or until chicken is done, using long tongs to turn packets every five minutes or so.
For grill cooking: Place packets on grill over medium heat for 10 to 15 minutes or until chicken is cooked through, using tongs to turn packets once. Carefully open packets to allow steam to escape.
Serve with lime wedges, tortillas, and any other fixings desired.
