Chicken Enchiladas

Ingredients:

  1. 3 pounds - chicken breast cooked and shredded
  2. 12 ounces - salsa
  3. 8 ounces - jack cheese shredded
  4. 1 cups - sour cream
  5. 2 cans - cream of chicken soup
  6. 20 - tortillas
  7. 4 teaspoons - chili powder
  8. 1 teaspoons - cumin

Directions:

In large mixing bowl, combine soup, salsa, sour cream and spices. In another bowl, mix 2 cups sauce mixture with chicken and 1 cup of cheese.

Equally fill and roll each tortilla with chicken mixture. Place into two 9x13 baking dishes.

Top with remaining sauce mixture then remaining cheese.

Cover and freeze OR bake at 350 degrees for 30-40 minutes or until cheese is nice and bubbly.
