Chicken Enchiladas

Ingredients:

  1. 3 whole - Chicken Breasts Boneless, Skinless
  2. 1 jars - Taco Sauce
  3. 1 cans - Enchilada Sauce
  4. 1 bags - Fiesta Blend Cheese
  5. - Salt and Pepper
  6. 10 whole - Tortillas (Or 20 Mini)
  7. 2 containers - Queso Dip
  8. - Chicken Broth
  9. - Cream of Chicken Soup (Optional)

Directions:

1. Boil chicken in either chicken broth or a mixture of chicken broth and cream of chicken soup for 1 hour.
2. Once done shred the chicken(I use a hand mixer it works wonders) and add salt and pepper to taste. Add jar of taco sauce, can of enchilada sauce and the whole bag of cheese then mix together.
3. Spoon into tortillas, roll them up and place in a greased dish.
4.Cover in queso cheese.
5. Bake at 350° for 25 minutes.
