Chicken Divan

Ingredients:

  1. 6 - chicken breasts
  2. 2 packages - 10 oz. frozen broccoli spears
  3. 1/2 teaspoons - salt
  4. - pinch of pepper
  5. 2 cans - cream of chicken soup
  6. 1 cups - mayonnaise or Miracle Whip
  7. 1 teaspoons - lemon juice
  8. 1 teaspoons - curry powder
  9. 3/4 cups - shredded cheddar cheese
  10. 2 slices - Swiss or Gruyere cheese
  11. 1/2 cups - grated Parmesan cheese
  12. - paprika
  13. - cooked rice for serving with

Directions:

Boil chicken breast until fully cooked. Remove skin and bones.

Cook broccoli and drain well. Do not overcook.

Place broccoli into bottom of 9x13 inch pan. Place chicken breasts, which can be either sliced or left in chunks, on top of broccoli.

In a saucepan, combine salt, pepper, chicken soup, mayonnaise, lemon juice, curry powder, cheddar cheese and Gruyère cheese. Heat on stove until blended and cheese is melted.

Pour cheese mixture over top of chicken and sprinkle generously with Parmesan cheese and a little paprika.

Bake 30 minutes at 350ºF. Serve piping hot over rice.

Down memory lane: Christmas of 1985, we were living in Saint-Lazare, PQ and I was 8 months pregnant for #4. Doctor would not let me go visit family at 4 hours distance. This was the first Christmas without family other than my husband and 3 young children. Friends of ours from South Africa, living in Hudson, invited us over for dinner Christmas Day so that we could celebrate together. It was one of the most memorable Christmas days and whenever I make this recipe, I think of them and their fellowship. It has now become a favourite of all of the extended family.
