Really good with buttered, parsley egg noodles and carrots. You can actually use the mix for flattened pork loin chops. Peggy and Helen would order schnitzel cor don bleu in Germany when they were teenagers.

Ingredients:
- 1/2 cups - deli Swiss
- 1/2 cups - deli ham
- 1 tablespoons - fresh chopped parsley
- 3 tablespoons - white wine
- 2 teaspoons - fresh minced garlic
- 4 - boneless skinless chicken breasts
- 2 cups - flour
- 1 - egg
- 2 cups - seasoned bread crumbs
- - EVOO or peanut oil
- - parchment paper
- - shallow baking pan
Directions:
Mix first 5 ingredients together, refrigerate
Pound chicken thin
Place equal share of ham & Swiss mixture in middle of chicken breast
Roll chicken around mixture sealing any open spaces, place seam side down on plate, refrigerate 1 hour.
Breading :
Place flour on plate, season with salt and pepper
Whisk egg on separate plate with 1 tbls water
Place bread crumbs on third plate
Roll chicken breast in flour, dip in egg wash, roll in bread crumbs, refrigerate till chilled.
Preheat oven @ 350.
Fry coated breasts in oil, place on parchment paper in shallow pan, bake for 25 mins.
