Chicken Chipotle

Ingredients:

  1. 8 - chicken thighs
  2. 15 ounces - tomato sauce
  3. 4 - chipotles in adobo sauce
  4. 4 - limes juiced
  5. 4 cloves - garlic
  6. 4 ounces - water
  7. - salt and pepper to taste
  8. - flour for dusting
  9. - vegetable oil for frying

Directions:

Puree the tomato sauce, chipotle, lime juice, water and garlic in a blender.

Season the chicken thighs with salt and pepper before dusting with flour.

In 1 cup of heated vegetable oil, saute the chicken on medium high heat until it is golden brown, turning once to brown both sides. Then discard excess oil.

Pour pureed tomato mixture into the pan over the chicken and simmer, covered, on low heat for 20 minutes.
