Chicken Casserole

Ingredients:

  1. 4 - Chicken breasts or 2 lbs cut up chicken
  2. 1/2 cups - Italian Dressing
  3. 2/3 cups - Rice uncooked
  4. 16 ounces - bag mixed veggies brocolli, carrotts, water chestnuts
  5. 1 cans - French Fried Onions
  6. 1 3/4 cups - Chicken broth
  7. - seasonings as desired

Directions:

Put breasts in 8 x 12 dish; pour dressing over chicken, bake uncovered at 400 for 20 minutes; place rice and veggies, 1/2 can onion under and around chicken. Combine broth and seasonings and pour over chicken and veggies. Bake uncovered for 25 minutes and top with onions baking an extra 2 - 3 minutes. Let stand 5 minutes before serving.
