Chicken Cacciatore

Ingredients:

  1. 3 tablespoons - olive oil
  2. 1 cups - onion chopped
  3. 4 cloves - garlic chopped
  4. 1 cups - carrots chopped
  5. 1 cans - diced tomatoes, no salt added Do not drain
  6. 1 tablespoons - salt
  7. 1 tablespoons - cracked pepper
  8. 4 sprigs - fresh thyme
  9. 4 pieces - chicken thighs, bone-in, skin on

Directions:

Preheat oven to 350°

In a dutch oven (or large oven safe pot with lid), heat oil over medium high heat. Pat the chicken dry with a paper towel and season with salt and pepper. Add the chicken pieces to the dutch oven and brown, about 5 minutes per side. Transfer the chicken to a plate and set aside. Add onion and garlic to the same pan and saute over medium heat until the onion is tender, about 3-5 minutes. Add carrots, tomatoes, and thyme and bring to gentle boil. Return chicken and coat in sauce. Salt and pepper to taste.

Cover and bake for 60-75 minutes, or until meat falls away from the bone easily. Serve with grated parmesan cheese.
