Ingredients:
- 1 tablespoons - canola or corn oil
- 1 - medium garlic clove minced
- 6 - boneless, skinless chicken breast halves (about 4 oz. each) all visible fat discarded
- 1 - medium onion chopped
- 2 tablespoons - green bell pepper chopped
- 4 - medium tomatoes peeled, if desired, and chopped
- 1/4 cups - dry white wine regular or nonalcoholic
- 1/4 teaspoons - dried rosemary leaves crushed
- 1/4 teaspoons - dried basil crumbled
- 1/8 teaspoons - pepper
- 1 - bay leaf
- 8 ounces - button mushrooms sliced
Directions:
In a large nonstick skillet, heat the oil and garlic over medium-high heat. Swirl to coat the bottom of the skillet. Brown the chicken on both sides; transfer to a plate.
Reduce the heat to medium and cook the onion and green pepper for 2-3 minutes, or until the onion is soft, stirring occasionally.
Return the chicken to the skillet. Stir in the remaining ingredients except the mushrooms. Bring to a simmer. Reduce the heat and simmer, covered, for 20 minutes.
Stir in the mushrooms. Simmer, covered, for 10 minutes, or until chicken is tender. Remove the bay leaf before serving the chicken.
