Chicken Bolognese

Ingredients:

  1. 3 strips - bacon finely chopped
  2. 1 tablespoons - olive oil
  3. 2 cloves - garlic minced
  4. 1 cups - finely diced onion
  5. 3/4 cups - finely diced carrot
  6. 1 pounds - ground chicken
  7. 2 teaspoons - kosher salt
  8. 1/4 cups - tomato paste
  9. 1/4 cups - white wine
  10. 3/4 cups - chicken broth
  11. 1/2 pounds - cooked penne pasta
  12. - ricotta, Parmesan and pepper for serving

Directions:

In a pot or Dutch oven, saute the bacon in the olive oil until just crisp. Add the garlic, onion, and carrot; cook until veggies are tender (about 5 minutes).

Add chicken and salt to Dutch oven and cook, breaking chicken up, for about 10 minutes until cooked through.

Stir in tomato paste, white wine, and chicken broth. Cook covered for 5 minutes, then uncovered until the sauce is reduced almost completely (about 10-15 minutes).

Stir in cooked penne and serve with ricotta, Parmesan and sprinkled with black pepper, if desired.
