Ingredients:
- 2 - large cooked chicken breasts (or rotisserie chicken) shredded or chopped
- 2 - large ripe avocados
- 1 cups - cooked corn
- 12 ounces - turkey bacon cooked and chopped
- 1/4 cups - chives (or green onion) chopped
- 2 tablespoons - dill chopped
- 4 - hard-boiled eggs
- 3 tablespoons - lemon juice
- 4 tablespoons - extra virgin olive oil or more, to taste
- 1 teaspoons - sea salt
- 1 teaspoons - black pepper
Directions:
Dice or shred the chicken breasts and put into a large bowl.
Peel and pit 2 large avocados, slice into bite sized pieces and add to the chicken mixture.
Chop up all 4 hard-boiled eggs and add that to the chicken mixture.
Add one cup of cooked corn and toss in the green onion, turkey bacon and fresh dill.
Mix the dressing ingredients all together and pour over the salad.
