Chicken and Sausage Jambalaya

  1. 1/4 cups - onion
  2. 1/4 cups - green pepper
  3. 1 cloves - garlic
  4. 2 tablespoons - margarine or butter
  5. 3 - chicken tenderloins (or 1 chicken breast)
  6. 6 ounces - andouille sausage


In a large skillet, melt butter or margarine, and cook onion, garlic and green pepper until slightly tender. Add chicken pieces to skillet, sprinkled with Cajun seasoning, and cook, turning, until cooked through (6-8 minutes). Add sausage slices, stir, and cook until just heated through.

Stir in the undrained tomatoes, chicken broth, rice, thyme, Cajun seasoning, salt and pepper, and hot pepper sauce. Bring to a boil; reduce heat to a simmer. Cover and simmer about 20 minutes or until rice is tender.
