Chicken and Rice Lettuce Wraps

Ingredients:

  1. 2 cups - cooked basmati rice
  2. 1/2 cups - chopped walnuts
  3. 1/3 cups - dried currants
  4. 1 - minced shallot
  5. 1 - sliced scallion
  6. 5 - kalamata olives minced
  7. 1 1/2 cups - shredded cooked chicken
  8. - butter lettuce leaves for wrapping
  9. 1 tablespoons - red wine vinegar
  10. 2 tablespoons - olive oil
  11. 1/4 teaspoons - kosher salt
  12. 1/2 teaspoons - lemon zest
  13. 1 teaspoons - honey
  14. 1/4 cups - flat-leaf parsley chopped

Directions:

Mix together the rice, walnuts, currants, shallot, scallion, olives and cooked chicken. Set aside.

In another bowl, whisk together the red wine vinegar, olive oil, salt, lemon zest, honey and parsley.

Toss dressing with rice mixture. Serve rice salad wrapped in butter lettuce leaves.
