Ingredients:
- 2 cups - uncooked penne pasta
- 8 ounces - Monterey Jack cheese shredded
- 3/4 cups - half and half
- 2 tablespoons - butter
- 1 - poblano chile roasted, seeded, chopped
- 1/4 cups - pine nuts toasted
- 3/4 cups - My Brother's Fire Roasted Salsa
- 3 - small boneless skinless chicken breasts grilled, sliced
Directions:
Cook penne al dente according to package directions.
Melt butter in large deep skillet; add half and half and shredded cheese. Stir over medium-low heat until all melts and becomes creamy.
Add Poblano chile, pine nuts, cooked pasta, salsa, and grilled chicken. Season with salt and pepper.
Serve immediately. Add additional half and half if it becomes too stiff.
Optional garnish: chopped crispy bacon.
