    If you want to make this quicker, use store bought chicken broth to start. Cut up and sauté boneless, skinless chicken breasts and reserve to add when gravy is finished.

Ingredients:

  1. 2 pounds - chicken
  2. - water
  3. 1 tablespoons - salt
  4. 1 pounds - carrots washed, peeled and sliced
  5. 1 - large onion
  6. - chicken soup base or bullion
  7. 1 cups - cold water
  8. 3/4 cups - flour
  9. 1 3/4 cups - flour
  10. 1/2 teaspoons - salt
  11. 3 teaspoons - double acting baking powder
  12. 6 tablespoons - chilled margarine or butter
  13. 1 cups - milk

Directions:

Chicken (& broth)
Half fill a large stock pot with water , add salt, bring to a boil. Add chicken to boiling water. Boil until done (about 40 min to 1 hour). Remove chicken and debone when done. Reserve broth.

Gravy
Strain and defat broth, bring to a boil.
Add:
Sliced carrots and onion. Simmer 15-20 minutes until carrots are tender.

Add;
Chicken soup base to taste (1 tbs at at time).
When taste is right, thicken:

In a closeable container add:
1 cup cold water
3/4 cup flour
Cover and shake vigorously until thoroughly combined.
Whisk or stir simmering broth (you may not need to use all at once) until preferred consistency, simmer until flour cooks and gravy isn't so "white-ish".

Add chicken to gravy OR put chicken in bottom of baking pan, then add gravy on top.

"Dumplings" (Biscuits)
Whisk together in large bowl the flour, salt and baking powder (as listed under the Dumplings heading in the ingredients).

Cut margarine (or butter) into dry ingredients with a fork, or 2 knives using a scissors motion. Mix well with hands, rubbing mixture between hands or fingers. It should almost look like course sand when finished.
Make a well in the center. Add milk all at once into well.
Stir to combine scant 1 minute, the stir vigorously until thick and sticky (less than a minute).
Drop by spoonfuls (I find using 2 of the smaller spoons - teaspoons, not the measuring kind - works best, one to scoop, and one to scrape) on top of the gravy in the baking pan, until top is covered with biscuit dough.

Bake 30 minutes a preheated 450° oven until biscuits are cooked through and golden brown. Bake more if needed, 5 minutes at a time until done.
Remove from oven and let cool 15 minutes before serving.
