Chicken and Cheese Quesadilla Pie

Ingredients:

  1. 1 - 10-inch flour tortilla
  2. 1 - rotisserie chicken skin discarded, meat shredded
  3. 1/2 cups - cilantro finely chopped
  4. 1/3 cups - pickled jalapenos drained, chopped
  5. 2 cups - sharp cheddar cheese shredded
  6. 2 - large eggs
  7. 1 cups - whole milk
  8. 1 cups - all-purpose flour
  9. 1 teaspoons - baking powder

Directions:

Adjust oven rack to middle position and heat to 450 degrees F.

Grease a 9-inch pie plate. Press tortilla into prepared pie plate and spray lightly with cooking spray.

Toss chicken, cilantro, jalapenos, 1 cup of cheese, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl until combined. Spread filling over tortilla.

Whisk together eggs, milk, flour, baking powder and 1/2 teaspoon salt in another bowl until smooth. Slowly pour over filling, then sprinkle with remaining cheese.

Bake until surface is golden brown, about 20 minutes. Let cool 5 minutes.

Cut into wedges and serve.
