This is a custard pie; therefore, it is NO respecter of time. My estimated bake time is just that, an estimate based on my oven's 'actual' temperature. Some ovens run hotter than others.

Ingredients:
- 2/3 sticks - Butter, softened
- 1 1/2 cups - Sugar
- 1 1/2 tablespoons - Cornmeal
- 1 tablespoons - White vinegar
- 3 whole - Eggs, large
- 5 tablespoons - Evaporated milk
- 1 teaspoons - Vanilla extract
- 1 - 9" pie crust
Directions:
Preheat oven to 425 degrees.
Cream butter and sugar together until creamy.
Add cornmeal...then vinegar...until well blended.
Now by hand, add eggs one at a time until each is fully incorporated.
Add evaporated milk...then vanilla extract...stir until well blended.
Pour into prepared 9" pie crust (make sure you follow pie's instructions for prepping)
Bake on middle rack at 425 degrees for 10 minutes.
Then reduce the oven to 325 degrees for remainder of time.
The pie is done when it is no longer liquid like in the middle.
Remove from oven and cool in pan on rack for at least 20 minutes before serving.
