Variations: You could also add or substitute bell peppers, asparagus, or spinach for any of the vegetables in this version. Adding bacon, shredded chicken, or cooked breakfast sausage could also mix up the flavors. Storing: This dish will keep in the fridge for about 3-4 days in an airtight container. To reheat, place in the microwave, oven or toaster oven and warm up for a few minutes. Freezing: If you cut this into 4 pieces and wrap each piece with foil, then place the wrapped pieces in a freezer bag, you could store it in the freezer for a couple of months. To use, thaw in the fridge overnight and reheat the next day in microwave or oven until warm.

Ingredients:
- 2 teaspoons - butter or olive oil
- 1 - small onion , chopped (or half a large onion)
- 1 cups - sliced mushrooms
- 9 - large eggs
- 2 cups - broccoli florets , cooked
- 6 ounces - cheddar cheese, cut into chunks
- 3/4 teaspoons - salt
- 1/4 teaspoons - cayenne pepper, to taste
- 1/8 teaspoons - black pepper, to taste
Directions:
Preheat your oven broiler and move the oven rack down to about 5 inches from the broiler.
In a large cast iron or oven-proof skillet, heat the butter or olive oil over medium heat. Add the chopped onions and cook 5 to 8 minutes or until almost see-through in color. Stir in the mushrooms and let them cook for about 2 minutes until they have just started to brown.
Meanwhile, in a mixing bowl, whisk together eggs, milk, salt, cayenne pepper, and black pepper.
When the onions are cooked, spread the broccoli in the pan. Top with the chopped ham. Sprinkle the cheese over the top. Pour the egg mixture over the top. Don't stir!
Cook for about 10 minutes, or until the edges are well set. Transfer the pan to the broiler.
Broil for 3-5 minutes, depending on whether you're using Hi broil or Lo broil. Don't walk away! Check it every 1 minute.
The frittata is done when the top is brown and the eggs are set (not wiggly).
Serve with a fruit salad, a green salad, or some fresh biscuits for a delicious breakfast, brunch or dinner.
