Cheesecake Cupcakes

Ingredients:

  1. 3 packages - lite cream cheese 8 oz. each
  2. 5 - medium eggs
  3. 1 cups - lite sugar
  4. 1 teaspoons - vanilla
  5. 1 cups - lite sour cream
  6. 1/4 cups - lite sugar
  7. 1/4 teaspoons - vanilla

Directions:

For cupcakes, cream together the cream cheese and eggs; add the sugar and vanilla and mix until thoroughly combined.

Pour into 24 aluminum cupcake cups (about 3/4 full). Bake at 300 degrees F for 40 minutes. Remove from oven, but do NOT turn oven OFF!

While cupcakes are cooling (about 5-10 minutes), combine topping ingredients in a small bowl and mix well. Top off the cupcake cups with this mixture and bake 5-10 minutes more in the 300 degree F oven.
