Cheese Soup

Ingredients:

  1. 1/2 cups - Butter
  2. 1 cups - Onion Chopped
  3. 1 cups - Celery Chopped
  4. 1 cups - Carrots Chopped
  5. 4 cups - Chicken broth
  6. 1/4 cups - Flour
  7. 1 tablespoons - Cornstarch
  8. 1 quarts - Milk
  9. 1 pounds - American cheese
  10. 1 teaspoons - Pepper
  11. 1/2 teaspoons - Cayenne pepper

Directions:

1. In butter, saute onion, celery and carrots until tender.
2. Combine broth with flour, stir well to dissolve lumps and then add to vegetables while stirring.
3. Mix cornstarch with milk and add to vegetable mixture; cook at least 10 min. over low heat.
4. Add cheese, black pepper and cayenne and cook slowly on very low heat and stir until cheese melts.
