Cheese Soup

Ingredients:

  1. 3 stalks - celery chopped
  2. 2 - carrots grated
  3. 2 cans - chicken broth
  4. 1 pounds - Velveeta cubed
  5. 1 cups - grated cheddar
  6. 8 ounces - sour cream
  7. 3 cans - whole potatoes
  8. - milk
  9. - parsley
  10. - salt and pepper
  11. - a few drops of Tabasco
  12. 2 tablespoons - sherry optional
  13. 1/2 sticks - butter
  14. 1/2 - medium onion chopped

Directions:

Blend up undrained potatoes in a blender or food processor; add milk to make 4-5 cups of soup.

In a saucepan, saute onions, celery and carrots in butter. Add broth and simmer for 30 minutes.

Pour potato mixture into pan with broth, and add Velveeta, parsley, salt and pepper, and a few drops of Tabasco.

Stir in sour cream and simmer 15 minutes; add sherry, if desired, and serve.

Makes about 10 cups.
