Cheese Soufflé

Ingredients:

  1. 60 grams - Butter
  2. 1 cups - Milk
  3. 125 grams - Grated Cheese
  4. 50 grams - Flour
  5. 4 - Eggs
  6. - Salt
  7. - Pepper
  8. 60 grams - Butter
  9. 1 cups - Milk
  10. 125 grams - Grated Cheese
  11. 50 grams - Flour
  12. 4 - Eggs
  13. - Salt
  14. - Pepper

Directions:

In a pan, melt the butter and add the flour. Dilute well, and let it turn lightly brown.

Add the lukewarm milk and stir until the sauce becomes thick.

Add salt and pepper and let it cool down.

Add the eggs yolks one by one while stirring, then add the grated cheese.

Beat the egg whites until they are firm.

Add them into the mix at the last moment.
To add it; incorporate it softly; becareful not to break them too much.

Pour the mix in greased mold with high edges (4 to 6 inches), the mix must not go higher than half-height of the mold.

Bake at 360°F (180°C) for 25 to 30 minutes.

Soufflé is ready when it lightly overflow.

Serve immediately (if you don't, it will deflate).
