Brief Description
A lovely delicate cheese and onion flavour that is universally loved by children and is a very ‘British’ flavour. Can be eaten hot or cold. Is great cold for picnics or pack lunch, or just warmed slightly with a salad. Very ‘more’ish’.

Ingredients:
- 1 - Egg
- 1 1/2 ounces - Cheddar Cheese, grated
- 1 - Onion, finely chopped
- 1 pounds - Plain Flour
- 1 pinchs - Salt & Pepper To taste
- 1/2 pints - Milk
- 1 ounces - Butter
- 1 pounds - Self Rising Flour
- 4 ounces - Margarine
- 4 ounces - Lard
- 1 pinchs - Salt
- 6 tablespoons - Very Cold Water (Only 6 T)
Directions:
Step 1
Rub Lard and Marg with the flour to create Breadcrumbs with tips of fingers.
Step 2
Mix in 1 tablespoon (15g) of sugar if need for sweet pastry - (My Mum only uses sweet pastry for Christmas mince pies!)
Step 3
Sprinkle very cold water over top - cut in with metal knife.
Step 4
Bring together gently. (Underworked is crumbly, overworked is rubbery).
Step 5
Roll out carefully. Rest to avoid shrinkage. Let pastry fall over rim of flan dish and trim after baking to avoid shrinkage.
Step 6
(If Blind Baking the pastry with ceramic beads/beans - 190 degrees for 12-15 mins. This is not needed for this recipe but also works well)
Step 7
Make White Sauce, add milk slowly, then Cool.
Step 8
Add beaten egg, grated cheese, Onion chopped finely - pour into pastry case.
Step 9
Bake 200°C or Gas Mark6 for 20 mins
