Cheese- Filled Butter Cookies

Ingredients:

  1. 1 1/2 teaspoons - Vanilla
  2. 4 cups - All-purposed Flour
  3. 2 tablespoons - Milk
  4. 3/4 cups - Cottage cheese
  5. - 3 oz. Cream cheese softened
  6. 1 - Egg Yolk
  7. 1/2 cups - Powdered Sugar
  8. - Small multicolored decorative candies
  9. 2 cups - Butter softened
  10. 1/2 cups - Sugar

Directions:

1. In large bowl, beat butter of 30 seconds. Add sugar & 1 t. of the vanilla, beat until combined. Beat in 2 cups of flout & milk. beat in remaining flour. Cover & set aside.
2. For filling: drain cottage cheese if needed. Beat cottage cheese, cream cheese, egg yolk & remaining 1/2 t. vanilla. Beat in powder sugar until mixed (will not be smooth). Preheat oven to 325 degrees.
3. Shape into 1 inch balls, place about 2" apart on ungreased cookie sheet. Using thumb make an indention in each ball. Spoon 1/2 t. filling into each. Top with candies.
4. Bake for 18-20 minutes or until edges are firm but not brown. Remove from sheet, cool on wire rack. Makes about 84 cookies.
