Champagne Shrimp Salad

Ingredients:

  1. 1 packages - frozen cooked large shrimp thawed & tails off
  2. 1 heads - lettuce
  3. 1 - ripe avocado sliced
  4. 3 - scallions chopped
  5. 4 slices - applewood-smoked bacon cooked, crumbled
  6. 12 - Brianna's Champagne Caper Vinaigrette

Directions:

Pour some of the dressing over shrimp in a bowl. Let marinate in refrigerator for an hour before serving. Arrange lettuce leaves and avocado on plates. Spoon shrimp, with vinaigrette, over lettuce and then sprinkle scallions and bacon over all. If desired, add more vinaigrette.
