Ingredients:
- 1 - large head of cauliflower cut into florets
- 1 tablespoons - olive oil
- 2 1/4 cups - milk
- 1/4 cups - flour
- 1 1/2 teaspoons - sea salt
- 1/4 teaspoons - smoked paprika
- 1/8 teaspoons - ground nutmeg
- 1 3/4 cups - sharp cheddar
- 3/4 cups - panko breadcrumbs
- 1 tablespoons - melted butter
- 1/2 teaspoons - dried thyme
Directions:
Preheat oven to 400 degrees F.
Fill a 9-x-13-inch baking dish with cauliflower florets. Drizzle olive oil over top and roast in the oven for 20 minutes.
Meanwhile, in a bowl, mix together the milk, flour, sea salt, paprika, and nutmeg. Whisk well to combine flour smoothly; then toss in the shredded cheese.
Remove cauliflower from oven, and pour the milk mixture over all, tossing a little bit to allow the cheese to work in among the cauliflower.
In another bowl, mix together the panko, melted butter, and thyme. Sprinkle the panko mixture over the top of the cauliflower. Bake for another 25 to 30 minutes until golden on top and bubbly around the edges.
