Cauliflower Couscous

  1. 1 heads - cauliflower cut into florets
  2. 2 tablespoons - extra-virgin olive oil
  3. 3/4 cups - yellow onion diced
  4. 2 cloves - garlic minced
  5. 1 teaspoons - sea salt
  6. 1/4 teaspoons - cracked pepper
  7. 2 tablespoons - unsweetened dried cherries
  8. 1/4 cups - chopped fresh basil
  9. 1/4 cups - chopped fresh cilantro
  10. - zest from one lemon


Grate cauliflower by running the florets through a food processor with a grating attachment or use a box grater to create rice-like pieces.

Pick out any large fragments that didn't get shredded and save for another use.

Heat olive oil in a skillet over medium heat. Saute the onions and garlic for 2 minutes, then add the cauliflower, salt and pepper. Saute for 8 to 10 minutes until cauliflower is tender.

Stir in the cherries, basil, cilantro and lemon zest.
