Cauliflower Cashew Cream Sauce

Ingredients:

  1. 1 - Florets from a small/medium Cauliflower no stems
  2. 1/4 cups - Raw Cashews soaked at least 2 hours and drained
  3. 3 cloves - Garlic sliced
  4. 1 - Sweet Onion chopped
  5. 1/2 cups - Vegetable or Chicken broth
  6. 1 tablespoons - Coconut Oil
  7. 1/4 cups - Nutritional Yeast
  8. 1/4 teaspoons - Nutmeg
  9. 1 tablespoons - Fresh Lemon Juice
  10. 1/2 teaspoons - Onion Powder
  11. 1/4 teaspoons - Garlic Powder
  12. 3/4 tablespoons - Fine Grain Sea Salt
  13. 1/2 teaspoons - Black Pepper

Directions:

Steam the cauliflower in a small amount of broth till fork tender adding broth as needed. once they are soft remove to high powered blender. Saute onions and garlic in coconut oil till very soft, transfer to blender. Add the rest of the ingredients to the blender and process till quite smooth. Pour into saucepan and heat through to serve over roasted vegetables or noodles.
