You can adjust the tartness of the yogurt by increasing the time (more tart) or decreasing the time (less tart) by approximately 2 hours in either direction.

Ingredients:
- 3/4 cup cashews
- 1 cup water
- 4 cups soy milk ( unsweetened plain)
- 1/4 cup yogurt starter (from your last batch)
Directions:
3/4 cup cashews
1 cup water
4 cups soy milk (Unsweetened plain)
1/4 cup starter yogurt
Soak 3/4 cup of cashews in hot water for about 15 minutes then blended them really well (maybe 3 or4 min. in the vitamix ). Pour them into the instant pot then put 2 cups of soy milk in the vitamix and run it just long enough to rinse the excess cashew cream out. Pour those 2 cups into instant pot and add 2 more cups of soy milk along with 1/4 cup of starter yogurt (from your last batch). Whisk it all together. Put lid on instant pot with the vent open, push the yogurt button and adjust time for 14 hours.
When it's done I like to pour it into a fine mesh strainer set over a bowl and let it rest for an hour or so to drain off some of the whey and thicken the yogurt a bit . We like to drink the whey or use it in salad dressing recipes.
