Cashew Shrimp

Ingredients:

  1. 1 pounds - shrimp cut into half
  2. 4 teaspoons - corn starch
  3. 1/4 teaspoons - sugar
  4. 1/4 teaspoons - baking soda
  5. 1/4 teaspoons - salt
  6. 1/8 teaspoons - pepper
  7. 1/2 cups - vegetable oil
  8. 1/2 cups - onions chopped
  9. 1 cloves - garlic
  10. 1 cups - zucchini chopped
  11. 3 1/2 cups - cooked rice
  12. 3/4 cups - cashews
  13. - sweet red pepper rings

Directions:

Mix together the corn starch, sugar, baking soda, salt and pepper, and coat the shrimp in this mixture.

Heat oil in skillet and saute shrimp. Remove and set aside.

Saute onions, red pepper, garlic, and zucchini. Stir in shrimp, rice and cashews. Cook until heated through.

Garnish with red pepper rings.
