Carrot, Zucchini and Apple Muffins

Ingredients:

  1. 2 cups - flour
  2. 2 cups - shredded carrots
  3. 1 1/4 cups - sugar
  4. 1 cups - shredded zucchini
  5. 1 cups - chopped apple
  6. 3/4 cups - raisins
  7. 3/4 cups - coconut
  8. 1/2 cups - chopped almonds
  9. 1 tablespoons - cinnamon
  10. 2 teaspoons - baking soda
  11. 1 1/2 teaspoons - grated orange peel
  12. 1 teaspoons - vanilla
  13. 1/2 teaspoons - salt
  14. 3 - large eggs
  15. 1 cups - vegetable oil

Directions:

Beat egg and oil in separate bowl. Mix all other ingredients together. Stir flour mixture into egg and oil.

Spoon into greased muffin tins and bake at 350 degrees F for 25 minutes.
