Carrot-Seaweed Medley

Ingredients:

  1. 1 1/2 teaspoons - toasted sesame oil
  2. 1/2 teaspoons - safflower oil
  3. 1/2 - yellow onion cut in thin half-moons
  4. 1 1/2 - large carrots cut in matchsticks
  5. 1/2 - red bell pepper chopped into 1/2-inch chunks
  6. 1/2 cups - frozen edamame shelled
  7. 1/2 cups - arame or hijiki seaweed soaked 5 min. in cool water, then drained
  8. 1/2 cups - water
  9. 1 teaspoons - Bragg Liquid Aminos or more, to taste
  10. 2 tablespoons - thinly sliced green onions

Directions:

Heat oils in large saute pan or wok. Add yellow onion and cook for 5 minutes. Stir in carrot, pepper, edamame, seaweed, and water. Cover and simmer on low for 15 minutes. Remove cover and add Bragg Liquid Aminos. Cook 3-5 more minutes, then stir in green onion.
