Carrot Raisin Muffin

Ingredients:

  1. 6 - eggs
  2. 1/2 cups - vegetable oil
  3. 1 1/2 cups - buttermilk
  4. 3 teaspoons - vanilla
  5. 4 cups - sugar
  6. 4 1/2 cups - flour
  7. 4 teaspoons - baking soda
  8. 3 teaspoons - cinnamon
  9. 1 teaspoons - salt
  10. 1 cans - crushed pineapple drained dry, 20 oz.
  11. 1 bags - grated carrots
  12. 2 cups - walnuts chopped
  13. 2 cups - flaked coconut
  14. 1 cups - raisins

Directions:

• Beat the eggs.

• Add sugar, oil, buttermilk and vanilla.

• In a separate bowl, combine flour, soda, cinnamon & salt.

• Mix wet and dry ingredients together.

• Add carrots, walnuts, coconut & raisins.

• Pour into muffin pan.

• Bake at 350 degrees for about 20 minutes.
