Ingredients:
- 6 - eggs
- 1/2 cups - vegetable oil
- 1 1/2 cups - buttermilk
- 3 teaspoons - vanilla
- 4 cups - sugar
- 4 1/2 cups - flour
- 4 teaspoons - baking soda
- 3 teaspoons - cinnamon
- 1 teaspoons - salt
- 1 cans - crushed pineapple drained dry, 20 oz.
- 1 bags - grated carrots
- 2 cups - walnuts chopped
- 2 cups - flaked coconut
- 1 cups - raisins
Directions:
• Beat the eggs.
• Add sugar, oil, buttermilk and vanilla.
• In a separate bowl, combine flour, soda, cinnamon & salt.
• Mix wet and dry ingredients together.
• Add carrots, walnuts, coconut & raisins.
• Pour into muffin pan.
• Bake at 350 degrees for about 20 minutes.
