Carrot Muffins Protein Packed

Ingredients:

  1. 2 cups - Kodiak Powercakes Protein Packed Mix
  2. 1/2 teaspoons - baking powder
  3. 1/2 teaspoons - baking soda
  4. 1 teaspoons - cinnamon
  5. 1/2 teaspoons - ginger
  6. 1/4 teaspoons - nutmeg
  7. 1/2 teaspoons - salt
  8. 1/4 cups - granulated stevia to equal 1/4 C sugar
  9. 2 cups - finely grated carrot, about 3 large
  10. 1/3 cups - melted coconut oil, or avocado oil
  11. 1 whole - egg
  12. 1 cups - applesauce, unsweetened
  13. 1 teaspoons - vanilla

Directions:

Add dry ingredients to large bowl, stir in grated carrot. (Helps keep carrot from clumping).
In separate, medium-sized bowl, add oil, egg, applesauce and vanilla. Beat well.
Pour wet ingredients into dry, gently combine with spatula until just mixed.
Spoon into greased or paper-lined muffin tins to make 18 muffins.
Bake 12-18 minutes or until toothpick inserted into center comes out clean.
