Carrot Ceviche

Ingredients:

  1. 1 pounds - carrots grated thinly
  2. 1/2 - purple onion
  3. 1/2 cups - cilantro
  4. 1/2 - cucumber
  5. 2 - to 4 Serrano peppers
  6. - tomato optional
  7. 4 - to 6 limes juiced

Directions:

Grate carrots finely; put in bowl and set aside.

In food processor, grate purple onion, cilantro, Serrano peppers, and cucumber; mix well.

Put food processor mixture with carrots in bowl. Mix well. If you want, chop up tomatoes and add to bowl. Pour in lime juice and stir together thoroughly.
