Ingredients:
- 2 cups - flour
- 2 cups - sugar
- 1 teaspoons - baking powder
- 1 teaspoons - baking soda
- 1/4 teaspoons - salt
- 2 teaspoons - cinnamon
- 5 - eggs
- 1 1/2 cups - vegetable oil
- 2 cups - grated carrots
- - nuts or raisins optional
- 1/2 pounds - powdered sugar
- 4 ounces - cream cheese
- 1 teaspoons - vanilla
- 1/2 cups - butter
- - chopped walnuts optional
Directions:
For Cake:
Mix together flour, sugar, baking powder, baking soda, salt and cinnamon.
Add eggs, oil and grated carrots, mixing well. Add nuts or raisins, if desired.
Bake at 350 degrees F for 45 to 60 minutes.
For Frosting:
Combine powdered sugar with cream cheese, butter and vanilla. Add walnuts, if desired.
