Ingredients:

  1. 2 cups - flour
  2. 2 cups - sugar
  3. 1 teaspoons - baking powder
  4. 1 teaspoons - baking soda
  5. 1/4 teaspoons - salt
  6. 2 teaspoons - cinnamon
  7. 5 - eggs
  8. 1 1/2 cups - vegetable oil
  9. 2 cups - grated carrots
  10. - nuts or raisins optional
  11. 1/2 pounds - powdered sugar
  12. 4 ounces - cream cheese
  13. 1 teaspoons - vanilla
  14. 1/2 cups - butter
  15. - chopped walnuts optional

Directions:

For Cake:

Mix together flour, sugar, baking powder, baking soda, salt and cinnamon.

Add eggs, oil and grated carrots, mixing well. Add nuts or raisins, if desired.

Bake at 350 degrees F for 45 to 60 minutes.

For Frosting:
Combine powdered sugar with cream cheese, butter and vanilla. Add walnuts, if desired.
