Carrot Cake

Ingredients:

  1. 1 1/2 cups - salad oil
  2. 2 cups - sugar
  3. 4 - eggs
  4. 2 cups - flour
  5. 2 teaspoons - baking powder
  6. 1 teaspoons - salt
  7. 1 1/2 teaspoons - cinnamon
  8. 2 cups - shredded carrots
  9. 1 cups - chopped walnuts
  10. 1 packages - 8 oz. cream cheese
  11. 1/2 sticks - melted butter
  12. 1 teaspoons - vanilla
  13. 1 pounds - sifted powdered sugar

Directions:

For Cake:
Blend together the salad oil and sugar, beating well. Add eggs, and beat thoroughly after each addition.

Sift flour, baking powder, salt and cinnamon together, and add to batter. Stir in carrots and walnuts.

Grease a loaf pan OR two 9-inch round pans (do not flour the pans). Bake for 1 hour in the loaf pan OR for 35 minutes in the 9-inch round pans.

For Icing:
Combine all icing ingredients and blend well until smooth.
