Carrot Cake

Ingredients:

  1. 4 - eggs
  2. 1 1/4 cups - oil (vegetable or canola oil)
  3. 2 cups - sugar
  4. 2 cups - flour
  5. 1 teaspoons - salt
  6. 2 teaspoons - baking soda
  7. 2 tablespoons - cinnamon
  8. 3 cups - grated carrots
  9. 1 packages - powder sugar
  10. 8 ounces - cream cheese
  11. 1 sticks - butter
  12. 1 teaspoons - vanilla
  13. 2 teaspoons - to 3 teaspoons milk

Directions:

Mix together the eggs, oil and sugar until blended.

Stir in flour, salt, baking soda and cinnamon; mix in grated carrots.

Pour into 13-x-9-inch cake pan and bake at 350 degrees F for 35-40 minutes.

For icing:
Beat together butter and cream cheese with vanilla and 2 teaspoons of milk; add powdered sugar in one cup portions, adding extra milk as needed for desired consistency.

Frost cooled cake.
