Ingredients:
- 4 - salmon fillets
- 3 tablespoons - parsley
- 3/4 teaspoons - salt
- 1/4 teaspoons - pepper
- 1 teaspoons - garlic powder
- 2 - lemons (1 juiced, 1 sliced)
- 3 tablespoons - melted butter
- 3 tablespoons - olive oil
- 1 - bundle of asparagus, chopped
- 1 cups - peas
- 1 pounds - orzo, uncooked
- 3 1/2 cups - veggie broth
- 1/2 cups - grated parmegiano reggiano
- 2 cups - fresh spinach
Directions:
1. Preheat the oven to 400°F.
2. In a 4.5 quart baking dish, for the marinade mix together the oil, butter, lemon juice, parsley, salt, pepper and garlic powder.
3. Dip salmon fillets in marinade, coat, and then set aside.
4. To the same dish, add asparagus, peas, orzo, and broth.
5. Cover with a lid or aluminum foil and bake for 20 minutes.
6. Remove from oven, add in grated parmigiano reggiano and spinach; mix together until spinach wilts.
7. Place salmon fillets into the baking dish and nestle them into the orzo mixture.
8. Top each salmon fillet with a lemon slice and bake uncovered for 15-20 minutes.
