Ingredients:

  1. 1 cups - Quinoa
  2. 2 cups - Water
  3. 1/4 cups - Olive oil
  4. 3 tablespoons - Lime juice Freshly squeezed

Directions:

1. Cook quinoa for 15 minutes and cool to room temperature.
2. Place the oil, citrus juices, sugar, spices, hot sauce and salt in salad bowl. Add the quinoa and all remaining ingredients and toss to combine.
3. Cover and refrigerate salad until needed. Can be made a few hours before needed. Gently toss salad again before serving
