Cajun Veggie Gumbo

Ingredients:

  1. 2 cans - black beans rinsed, drained
  2. 1 cans - diced tomatoes 28 oz.
  3. 1 packages - frozen loose-pack pepper stir-fry vegetables 16 oz.
  4. 2 cups - frozen cut okra
  5. 2 1/2 teaspoons - Cajun seasoning or more, to taste
  6. - hot cooked white or brown rice optional

Directions:

1. In a 3-1/2 or 4-1/2 quart slow cooker combine beans, undrained tomatoes, frozen stir-fry vegetables, okra, and Cajun seasoning.

2. Cover and cook on low-heat setting for 6-8 hours or on high-heat setting for 3-4 hours.

3. If desired, serve over hot cooked rice. You can add meat if you want.
