Cafe au Lait cheesecake

Ingredients:

  1. 3/4 cups - sugar
  2. 2 tablespoons - unflavored gelatin
  3. 1/4 teaspoons - salt
  4. 2 tablespoons - instant coffee powder
  5. 2 - egg yolks beaten
  6. 1 cups - milk
  7. 3 cups - cream style cottage cheese sieved
  8. 1 teaspoons - vanilla
  9. 2 - egg whites
  10. 1/4 cups - sugar
  11. 1 cups - whipping cream (whipped)
  12. 1/2 cups - graham cracker crumbs
  13. 1 teaspoons - sugar
  14. 2 tablespoons - melted oleo

Directions:

Blend first 3 ingredients and coffee powder. Stir in egg yolks and milk. Cook and stir over low heat 'til gelatin dissolves. Cool.

Stir in cottage cheese and vanilla. Chill, stirring occasionally, 'til mixture mounds.

Beat egg whites, add 1/4 cup of sugar, and beat until stiff. Fold in gelatin mixture; fold in whipped cream.

Pour into 9-inch spring form pan. Combine remaining ingredients and sprinkle over cake. Chill for 3 to 4 hours.
