Cabbage Soup

Ingredients:

  1. 2 cloves - garlic minced
  2. 1/2 - yellow onion chopped
  3. 1/2 cups - chopped carrots
  4. 3 cans - nonfat broth use any kind - beef, chicken or vegetable
  5. 1 tablespoons - tomato paste
  6. 2 cups - chopped cabbage
  7. 1/2 cups - green beans
  8. 1/2 teaspoons - basil
  9. 1/2 teaspoons - oregano
  10. - salt and pepper to taste
  11. 1/2 cups - chopped zucchini

Directions:

Spray pot that you want to make the soup in with non-stick cooking spray. Sauté onions, carrots and garlic for 5 minutes.

Add broth, tomato paste, cabbage, green beans, basil, oregano and salt & pepper to taste.

Simmer for a about 5-10 minutes until all vegetables are tender; then add the zucchini and simmer for another 5 or so minutes.

This is a very filling soup, can be made ahead and in big quantities. Great for lunch!
