Cabbage and Jicama Slaw

Ingredients:

  1. 1 - bunch cilantro
  2. 1/2 cups - sour cream
  3. 1 teaspoons - grated lime zest
  4. 3 tablespoons - fresh lime juice
  5. 1/2 cups - mayonnaise
  6. 1/4 - Head Green Cabbage thinly sliced
  7. 1 - small jicama julienned peeled
  8. 4 - scallions sliced

Directions:

1) Remove cilantro lieaves and coarsely chop, save stems
2) puree cilantro stems, sour cream, lime zest, and lime juice in blender
3) Transfer puree to large bowl and wisk in mayonnaise, season with salt and ppeper
4) Toss with cabbage, jicama, scallions, and cilantro leaves
5) Serve slaw or with fish tacos
