Butterscotch Pecan Pie

Ingredients:

  1. 1/2 packages - 15 oz. refrigerated pie crust (1 sheet)
  2. 3/4 cups - butterscotch morsels
  3. 3 tablespoons - butter
  4. 1 cups - light corn syrup
  5. 1/2 cups - sugar
  6. 3 - eggs
  7. 1 teaspoons - vanilla extract
  8. 1 1/2 cups - chopped pecans

Directions:

Preheat oven to 350° F. On a lightly floured surface, roll pie crust into a 12-inch circle. Fit pie crust into a 9-inch pie plate, crimping edges as desired; set aside.

In a small bowl, combine butterscotch morsels and butter. Microwave on High (100-percent power) for 30-second intervals, stirring after each, until morsels are melted and smooth (approximately 1 minute total). Let cool for 5 minutes.

In a medium bowl, whisk together corn syrup, sugar, eggs and vanilla until combined. Add butterscotch mixture, whisking to combine. Stir in pecans. Pour mixture into prepared pie plate.

Bake for 45-50 minutes or until set. Cool for 1 hour before serving.
